Elephant Mountain (象山)

This is the Taipei classic. I’m not going to add much that hasn’t been said elsewhere. Go here if you haven’t already, and see a fantastic urban sunset from different viewpoints while also getting a bit of hiking in (just a bunch of stairs). The night view of the city here is also fantastic. You’ll see a lot of photographers (and people in general) taking pictures at the various platforms for good reason: it’s pretty!

You can start from the more popular Xiangshan side (MRT Xiangshan Station) and walk up about 20 minutes to the first viewpoint. You can also start from the Four Beasts or Tiger Mountain area (the closest station is Yongchun on the Blue Line). That hike is a bit longer, but there are less people and a couple of the views on the Tiger Mountain side rival those from the viewpoints on the Elephant Mountain side.
